Vegan Cashew Layered Dessert with Chocolate

Ingredients

Bottom layer

  • 2 dl oats
  • 2 dl cashew
  • 1/2 tsp salt
  • 1 tbsp hempseeds
  • 10 dates
  • 1 tbsp cashew butter
  • 1 tbsp cacao powder
  • 0.5 dl water

Middle layer

  • 0.5 dl coconut oil
  • 0.5 dl agave syrup
  • 1 tbsp cashew butter
  • A handful of crushed cashews

Top layer

  • 50 g dark chocolate
  • A handful of crushed cashews
  • A pinch of sea salt

Preparation

  1. Blend all bottom layer ingredients in a food processor and press the dough into a form.

  2. For the middle layer, put everything except the cashews in a bowl, heat in the microwave for 30 seconds, blend, pour on top of the dough, add the crushed cashews, and place the form in the freezer.

  3. For the top layer, melt the chocolate and pour it on top, then sprinkle with crushed cashews and sea salt, and let it harden in the freezer before serving.
