Vegan Mango Cheesecake Bars

Ingredients

Dough

  • 2 dl oats
  • 1 dl cashews
  • 2 tbsp shredded coconut
  • A pinch of salt
  • 6 dates
  • 0.5 dl water

Liquid

  • 3 dl mango
  • 100 g vegan cream cheese (using @violife_foods)
  • 3 tbsp agave syrup
  • 1 tsp lemon juice

Preparation

  1. Add the oats and the cashews to a food processor and blend.

  2. Combine the rest of the ingredients above and mix until you have a sticky dough.

  3. Press the dough into a 15x20 form.

  4. Start with defrosting the mango if you are using frozen.

  5. After, add the rest of the ingredients to a food processor and mix until you have a smooth liquid.

  6. Pour the liquid into the form, over the dough.

  7. Add a lid on top of the form and put it in the freezer to harden.

  8. Cut into pieces when the bars are hard.

  9. When they are ready to eat, let them defrost for a few minutes before eating.
