Whole Grain Berry Tiramisu

Ingredients

Cream

  • 200g soy or coconut yogurt
  • 60g cashews
  • 5 dates
  • 50g coconut cream
  • vanilla extract

Berry sauce

  • 200ml soy milk
  • 80g frozen berries
  • 3 dates

Additional items

  • 8 small whole grain rusk (zwieback)
  • 100g frozen berries

Preparation

  1. Soak cashews and dates for 2 hours.

  2. Blend all cream ingredients and transfer to a bowl.

  3. Blend all berry sauce ingredients without cleaning the blender and transfer to another bowl.

  4. Soak each rusk in berry sauce for 20-30 seconds.

  5. Layer in a small tray: a layer of rusk, cream, frozen berries; repeat once more.

  6. Refrigerate for 1 hour.

  7. Serve with the remaining berry sauce and frozen berries.

Variation

  1. Instead of berries, use espresso and cacao to make a classic vegan tiramisu.
