No Bake Vegan Gluten Free CBD Ube Pie

Ingredients

Crust

  • 1 cup of pitted medjool dates
  • 1/2 cup cashews
  • 1/2 pumpkin seeds
  • 1/4 tsp sea salt
  • 1 tsp vanilla extract

Filling

  • 2 purple sweet potatoes
  • 1/3 cup coconut cream
  • 1/4 cup maple syrup
  • 1 tbsp cbd oil
  • 1 tbsp grated ginger
  • 1 tsp cinnamon powder
  • 1 tsp vanilla extract
  • 1/4 tsp sea salt

Preparation

  1. Peel and dice purple sweet potatoes and steam for 10-15 minutes until soft.

  2. In the meantime, in a food processor add dates, nuts, seeds, salt, and vanilla extract and pulse 5-8 times until doughy consistency.

  3. Transfer dough to a pie tray and press down until surface is covered. Set aside in fridge.

  4. Once sweet potatoes are cooked, transfer to a high speed blender and add coconut cream, maple syrup, vanilla extract, CBD oil, ginger, cinnamon, and sea salt.

  5. Blend everything until smooth.

  6. Pour filling into the pie tray and spread evenly.

  7. Let the pie chill for 2-3 hours, then serve and enjoy.

  8. Keeps in fridge for 7 days.
