Vegan Cashew Berry Cookie Filling

Ingredients

  • 2 cups cashews, soaked and drained
  • 2-3 heaping tablespoons freeze dried berries
  • 1/4 cup lemon juice
  • 1/4 cup pure maple syrup
  • 1 teaspoon vanilla extract

Preparation

  1. Place all ingredients in a high speed blender.

  2. Blitz until silky smooth.

  3. Set in fridge until firm.

  4. Pipe between cold cookies and serve.
