Vegan Cashew Berry Cookie Filling
Ingredients
- 2 cups cashews, soaked and drained
- 2-3 heaping tablespoons freeze dried berries
- 1/4 cup lemon juice
- 1/4 cup pure maple syrup
- 1 teaspoon vanilla extract
Preparation
Place all ingredients in a high speed blender.
Blitz until silky smooth.
Set in fridge until firm.
Pipe between cold cookies and serve.
