Vegan Chocolate Peppermint Fudge

Ingredients

  • 1 cup cashews (soaked for at least 4 hours)
  • 1/2 cup cacao powder
  • 1/2 cup maple syrup
  • 1/2 tsp vanilla extract
  • 1/3 cup cacao butter
  • 3-4 drops peppermint essential oil
  • cacao nibs for garnish

Preparation

  1. Soak the cashews in water for at least 4 hours or overnight.

  2. Melt the cacao butter in a small saucepan over low heat or using a double boiler and set aside to cool.

  3. Blend the cashews, cacao powder, maple syrup, and vanilla extract in a food processor for 1-2 minutes until smooth.

  4. Add the melted cacao butter and blend again until well mixed.

  5. Pour the mixture into a lined square baking dish and smooth it out with a spatula.

  6. Sprinkle cacao nibs over the top for garnish.

  7. Place in the freezer to set for at least 15 minutes.

  8. Remove from the freezer and cut into squares.

  1. Can be stored in the fridge or freezer.
