Vegan Poke Bowl with Carrot Ginger Miso Dressing

Ingredients

  • bamboo rice
  • dark greens
  • red cabbage
  • cherry tomatoes
  • edamame
  • green onions
  • avocado
  • Japanese style seasoning with seaweed and sesame seeds

Miso dressing mix

  • 1 steamed carrot
  • 1 small piece of ginger
  • 1 clove garlic
  • 1/4 cup miso
  • 3 Tbsp tahini
  • 1 Tbsp olive oil
  • 1 Tbsp molasses or honey (optional)
  • cayenne or pepper to taste
  • water as needed for consistency

Preparation

  1. Cook the bamboo rice according to package instructions.

  2. Steam one carrot until soft.

  3. Blend all dressing ingredients together until smooth: steamed carrot, ginger, garlic, miso, tahini, olive oil, optional molasses or honey, cayenne or pepper, and water as needed.

  4. Assemble the poke bowl by adding dark greens, red cabbage, cherry tomatoes, edamame, green onions, avocado, and Japanese seasoning to the cooked rice.

  5. Drizzle with the carrot ginger miso dressing and serve. For meal prep, prepare components in advance and assemble when ready.
