Best Guacamole with Pickled Red Onions

Ingredients

Pickled red onion

  • 1 medium red onion
  • 1/2 cup Apple cider vinegar
  • 1 Tsp Salt
  • 2 Tsp Sugar

Guacamole

  • 2-3 Ripe Avocados, large
  • 1/4 cup cilantro
  • 2-3 limes, juice
  • 1 medium tomato
  • 1/4 cup pickled red onion
  • 1 tsp garlic powder
  • Salt & pepper to taste

Preparation

  1. Dice onion into small pieces.

  2. In a small pan stir together the vinegar, salt and sugar. Cook over medium heat until it simmers.

  3. Add onions in a small bowl or pint-sized mason jar. Pour the hot vinegar mixture over the onions. Let the onions marinate for 30 minutes and then refrigerate or use.

  4. While onions are marinating mash avocado, chop cilantro, tomato and add to large mixing bowl.

  5. Squeeze lime juice in bowl, add seasonings and combine. When onions are ready add to guac and serve with tortilla chips or Mexican dish.
