Comforting Supergreen Soup
Ingredients
- ingredient • 2 tbsp oil
- 6 cloves of garlic, finely chopped
- 1 large onion, chopped
- 5 celery sticks, chopped
- 2 veg stock cubes
- 500ml water
- 1 cup of peas (fresh or frozen)
- half a broccoli head, roughly chopped
- salt & pepper to taste
- 1/2 tsp ginger powder
- 8 fresh mint leaves
- pinch of chilli powder (optional)
- 3 handfuls spinach leaves
- juice of half a lemon
Preparation
Heat the oil in a large pan. Add the garlic and onion and sautee for 5 mins until the onions begin to turn translucent
Next add the potato, cook for 3 mins in the oil before adding the celery, vegetable stock, pinch of pepper and water. Simmer for 10mins
Next add the peas and broccoli and cook for 5 mins on a low heat
Turn OFF the heat. Then stir in the ginger powder, mint leaves, pinch of chilli powder, spinach, lemon juice, salt and pepper to taste
I add these ingredients in once the heat is off to retain the colour, flavour & goodness]
Allow to cool slightly, blitz it all up. Taste test for salt and pepper
Serve hot with chunky sour dough bread and roasted garlic
