Delicious Hatch Chile Dragon Fruit Salsa

Ingredients

  • 1 to 2 roasted Frieda's Hatch Chiles
  • 1-2 Dragon Fruit (red or white)
  • 1/4 cup shallots
  • 2 tablespoons fresh lime juice
  • Salt, to taste
  • Optional: Tiny pinch of brown sugar

Preparation

  1. Gently combine all ingredients in a bowl.

  2. Refrigerate at least four hours for flavors to mingle.

  3. Serve with chips or over tacos.

  4. Use juice from about 1 lime, and consider trying key limes for a twist.
