Easy Baked Tofu

Ingredients

  • 1 block extra firm tofu, drained and pressed
  • 2 tbsp low sodium soy sauce
  • 2 tsp garlic chili sauce
  • 1/2 tsp cornstarch

Preparation

  1. Preheat oven to 400F

  2. Cut tofu into cubes and place In a Tupperware container

  3. Add soy sauce and garlic chili

  4. Sprinkle cornstarch over top evenly

  5. Seal the container and gently shake to coat tofu

  6. Take tofu and place individual pieces spread out over a lined sheet pan

  7. Place in oven and bake for at least 20-25 minutes

  8. Remove from oven and allow to cool

  9. Add tofu to dishes as desired

  10. I just folded a serving of tofu into the noodles then served

  11. Replacement Ideas

  12. Feel free to replace the tofu with canned chickpeas. Just drain and coat the same and bake as instructed

  13. If you don’t have fresh greens, opt for frozen kale/spinach and sauté into the noodles

  14. Tough vegetation like cabbage will last a bit longer than other greens because it’s much hardier. You can also quick pickle them by sprinkling with salt and a tablespoon of apple cider vinegar, 1 tsp maple syrup and massage with hands. Can be stored and used as needed
