Hearty Turkish Vegetable Soup
Ingredients
- 2 medium potatoes
- 1 carrot
- 2 small onions
- 3 cloves garlic
- A handful of celery
- A bit more than half a cup of lentils (127g)
- 2 tablespoons vegetable oil
- 1 tablespoon butter
- 1 teaspoon tomato paste
- 1 teaspoon pepper paste
- 1 teaspoon ground red pepper
- 1 teaspoon black pepper
- 0.5 teaspoon cumin
- 2 teaspoons dried mint
- Salt, to taste
- Juice of half a lemon
- 7 cups hot water (adjust according to thickness)
Preparation
First, chop all ingredients into small cubes.
Then, add vegetable oil and butter to a suitable pot.
Add the chopped ingredients and sauté for about 3 minutes.
Then, add the tomato and pepper paste and stir-fry a little more.
Add the washed and drained lentils and stir-fry a little more.
Pour in the hot water and cook until the vegetables are soft.
Blend the cooked vegetables until smooth.
Add salt, spices, and lemon juice.
Bring to a boil, then remove from heat.
Notes
Adjust the amount of water based on desired soup thickness.
