Herb Tahini Dressing with Lentil and Spinach Jedra

Ingredients

  • approximately 1/2 cup tahini
  • water
  • 1/2 lemon juice
  • fresh chives
  • salt
  • pepper
  • garlic powder
  • smoked paprika
  • dried parsley
  • 1/2 onion
  • 2 generous handfuls of fresh organic spinach
  • packet of lentils
  • 4 cups of cooked basmati rice
  • avocado oil
  • garlic
  • parsley
  • cumin
  • little bit of turmeric

Preparation

  1. Combine approximately 1/2 cup tahini with water to thin, 1/2 lemon juice, fresh chives, salt, pepper, garlic powder, smoked paprika, and dried parsley for the dressing.

  2. Sauté 1/2 onion.

  3. Sauté 2 generous handfuls of fresh organic spinach.

  4. Combine the sautéed onion and spinach with a packet of lentils.

  5. Add 4 cups of cooked basmati rice.

  6. Drizzle with avocado oil, salt, pepper, garlic, parsley, cumin, and a little turmeric.
