Homemade Nutella Stuffed Pancakes

Ingredients

Dry

  • 3/4 cup self raising flour
  • 1/3 cup wholemeal spelt flour
  • 1 tbsp brown sugar
  • 1 tbsp chia seeds
  • pinch salt

Wet

  • 1 tbsp apple cider vinegar
  • 1 tsp vanilla extract
  • 1 cup plant milk

Filling

  • 8 homemade vegan Nutella discs

Preparation

  1. Prepare the Nutella discs by spreading 1.5 tablespoons of vegan Nutella into a disc on non-stick baking paper and freezing for 10 minutes; repeat to make 8 discs.

  2. In a large bowl, mix all the dry ingredients together.

  3. Incorporate the wet ingredients and mix until smooth.

  4. Heat up a pan with a bit of vegan butter or neutral oil.

  5. Pour some of the pancake batter into the pan, add a Nutella disc in the middle, and cover it with more batter, ensuring it is fully covered.

  6. Cook until brownish on both sides.

Serving

  1. Serve with a drizzle of Nutella and chopped banana.
