Homemade Nutella Stuffed Pancakes
Ingredients
Dry
- 3/4 cup self raising flour
- 1/3 cup wholemeal spelt flour
- 1 tbsp brown sugar
- 1 tbsp chia seeds
- pinch salt
Wet
- 1 tbsp apple cider vinegar
- 1 tsp vanilla extract
- 1 cup plant milk
Filling
- 8 homemade vegan Nutella discs
Preparation
Prepare the Nutella discs by spreading 1.5 tablespoons of vegan Nutella into a disc on non-stick baking paper and freezing for 10 minutes; repeat to make 8 discs.
In a large bowl, mix all the dry ingredients together.
Incorporate the wet ingredients and mix until smooth.
Heat up a pan with a bit of vegan butter or neutral oil.
Pour some of the pancake batter into the pan, add a Nutella disc in the middle, and cover it with more batter, ensuring it is fully covered.
Cook until brownish on both sides.
Serving
Serve with a drizzle of Nutella and chopped banana.
