Improvised Vegan Pasta with Pizza Toppings
Ingredients
- cremini mushrooms
- navy beans
- rapini
- white onion and garlic
- kalamata olives
- homemade tomato sauce
- fusilli pasta
Preparation
Cook the fusilli pasta according to package instructions until al dente.
In a skillet, sauté the white onion, garlic, cremini mushrooms, and rapini in a little oil until softened and fragrant.
Add the navy beans, kalamata olives, and homemade tomato sauce to the skillet, stirring to combine and heat through.
Toss the cooked pasta with the sauce mixture and serve immediately.
