Oven-Baked Stuffed Potatoes with Ground Meat
Ingredients
- 5 medium potatoes
- Vegetable oil for frying
- Olive oil
- 400 g ground meat
- 1 onion
- 2 medium tomatoes, grated
- A handful of parsley, chopped
- Salt, to taste
- Black pepper, to taste
- Cumin, to taste
- 1 teaspoon pepper
- 1 tablespoon tomato paste
- 1 cup water
Preparation
Cut the potatoes in half and scoop out the insides, then fry them on both sides until golden.
Sauté the ground meat and onion in a little oil. Add 1 teaspoon pepper and 1 tablespoon tomato paste, and cook for 1-2 more minutes. Stir in the grated tomatoes and spices, sauté for 5 minutes, then turn off the heat and mix in the chopped parsley.
Arrange the potatoes in a baking dish, fill with the meat mixture, and decorate the top with tomato and pepper slices.
In a little olive oil, sauté 1 teaspoon pepper and 1 tablespoon tomato paste. Add 1 cup of water and boil for 1-2 minutes. Pour the sauce over the potatoes.
Bake in a 200°C oven until the toppings are browned.

This dish is as delicious as the stuffed eggplant version.
