Oven-Baked Stuffed Potatoes with Ground Meat

Ingredients

  • 5 medium potatoes
  • Vegetable oil for frying
  • Olive oil
  • 400 g ground meat
  • 1 onion
  • 2 medium tomatoes, grated
  • A handful of parsley, chopped
  • Salt, to taste
  • Black pepper, to taste
  • Cumin, to taste
  • 1 teaspoon pepper
  • 1 tablespoon tomato paste
  • 1 cup water

Preparation

  1. Cut the potatoes in half and scoop out the insides, then fry them on both sides until golden.

  2. Sauté the ground meat and onion in a little oil. Add 1 teaspoon pepper and 1 tablespoon tomato paste, and cook for 1-2 more minutes. Stir in the grated tomatoes and spices, sauté for 5 minutes, then turn off the heat and mix in the chopped parsley.

  3. Arrange the potatoes in a baking dish, fill with the meat mixture, and decorate the top with tomato and pepper slices.

  4. In a little olive oil, sauté 1 teaspoon pepper and 1 tablespoon tomato paste. Add 1 cup of water and boil for 1-2 minutes. Pour the sauce over the potatoes.

  5. Bake in a 200°C oven until the toppings are browned.

Notes

  1. This dish is as delicious as the stuffed eggplant version.
