Paleo Gluten-Free Lemon Blueberry Banana Bread

Ingredients

  • 3 eggs
  • 2 mashed bananas
  • 2 cups almond flour
  • 2 tablespoons coconut flour
  • 2 tablespoons unsweetened almond milk
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla
  • 1/4 cup melted ghee or butter
  • 1 teaspoon baking powder
  • 1 tablespoon lemon zest
  • 3/4 cup blueberries (fresh or frozen)

Preparation

  1. Preheat oven to 350°F.

  2. Zest one lemon using a grater; make sure to wash the lemon well first.

  3. In a bowl, whisk 3 eggs.

  4. Add 2 mashed bananas, 2 cups almond flour, 2 tablespoons coconut flour, 2 tablespoons unsweetened almond milk, 1 teaspoon cinnamon, 1 teaspoon vanilla, 1/4 cup melted ghee or butter, 1 teaspoon baking powder, and the lemon zest. Mix well.

  5. Gently fold in 3/4 cup blueberries (fresh or frozen).

  6. Pour the batter into a loaf pan lined with parchment paper.

  7. Bake for 35 minutes.

  8. Remove from oven and let cool, or serve immediately.

  9. Optionally, serve with butter or cashew butter for added flavor.
