Paleo Gluten-Free Lemon Blueberry Banana Bread
Ingredients
- 3 eggs
- 2 mashed bananas
- 2 cups almond flour
- 2 tablespoons coconut flour
- 2 tablespoons unsweetened almond milk
- 1 teaspoon cinnamon
- 1 teaspoon vanilla
- 1/4 cup melted ghee or butter
- 1 teaspoon baking powder
- 1 tablespoon lemon zest
- 3/4 cup blueberries (fresh or frozen)
Preparation
Preheat oven to 350°F.
Zest one lemon using a grater; make sure to wash the lemon well first.
In a bowl, whisk 3 eggs.
Add 2 mashed bananas, 2 cups almond flour, 2 tablespoons coconut flour, 2 tablespoons unsweetened almond milk, 1 teaspoon cinnamon, 1 teaspoon vanilla, 1/4 cup melted ghee or butter, 1 teaspoon baking powder, and the lemon zest. Mix well.
Gently fold in 3/4 cup blueberries (fresh or frozen).
Pour the batter into a loaf pan lined with parchment paper.
Bake for 35 minutes.
Remove from oven and let cool, or serve immediately.
Optionally, serve with butter or cashew butter for added flavor.
