Paleo White Chicken Chili

Ingredients

  • 2 chicken breasts
  • 1 tbsp avocado oil
  • 1 onion (diced)
  • 12 ounces cauliflower rice
  • 1 cup chopped gold potatoes
  • 4 cups chicken bone broth
  • 2 cans mild chopped green chiles

Spices

  • 1/2-1 tsp salt
  • 1/2 tsp pepper
  • 2 tsp chili powder
  • 1 tsp garlic
  • 1/2 tsp cumin
  • 1/2 tsp oregano

Preparation

  1. Take out your pressure cooker and turn it to sauté setting.

  2. Add avocado oil and diced onion and chopped potatoes.

  3. Sauté for 5 minutes.

  4. Turn off sauté mode and add the rest of the ingredients.

  5. Stir together and lock the lid on.

  6. Set the pressure cooker for 12 minutes.

  7. After 12 minutes, perform a slow release and remove the chicken.

  8. Place the chicken on a cutting board.

  9. Shred the chicken with two forks.

  10. Stir the shredded chicken back into the soup.
