Paleo White Chicken Chili
Ingredients
- 2 chicken breasts
- 1 tbsp avocado oil
- 1 onion (diced)
- 12 ounces cauliflower rice
- 1 cup chopped gold potatoes
- 4 cups chicken bone broth
- 2 cans mild chopped green chiles
Spices
- 1/2-1 tsp salt
- 1/2 tsp pepper
- 2 tsp chili powder
- 1 tsp garlic
- 1/2 tsp cumin
- 1/2 tsp oregano
Preparation
Take out your pressure cooker and turn it to sauté setting.
Add avocado oil and diced onion and chopped potatoes.
Sauté for 5 minutes.
Turn off sauté mode and add the rest of the ingredients.
Stir together and lock the lid on.
Set the pressure cooker for 12 minutes.
After 12 minutes, perform a slow release and remove the chicken.
Place the chicken on a cutting board.
Shred the chicken with two forks.
Stir the shredded chicken back into the soup.
