Simple Vegan Mushroom Gravy

Ingredients

  • 1 onion
  • 2 cloves garlic
  • 1 carrot
  • 150g mushrooms
  • 2 Tbsp tomato paste
  • 2 Tbsp flour
  • 1/4 cup red wine
  • 2 cups water
  • 1 Tbsp soy sauce
  • 1 Tbsp mustard
  • 2 bay leaves
  • 1 Tsp thyme
  • salt and pepper to taste
  • a pinch of sugar
  • Oil (for frying)

Preparation

  1. Roughly chop the onion, garlic, carrot, and mushrooms and fry them in a little oil for 5-8 minutes.

  2. Stir in the tomato paste and flour.

  3. Deglaze the pot with red wine.

  4. Add water, soy sauce, mustard, bay leaves, thyme, salt, pepper, and a pinch of sugar.

  5. Let the mixture simmer for 10-15 minutes.

  6. Strain the sauce through a sieve.

  7. Heat the sauce again to thicken it a bit more.

Notes

  1. This recipe makes 4-5 servings and takes about 20 minutes to prepare.
