Simple Vegan Mushroom Gravy
Ingredients
- 1 onion
- 2 cloves garlic
- 1 carrot
- 150g mushrooms
- 2 Tbsp tomato paste
- 2 Tbsp flour
- 1/4 cup red wine
- 2 cups water
- 1 Tbsp soy sauce
- 1 Tbsp mustard
- 2 bay leaves
- 1 Tsp thyme
- salt and pepper to taste
- a pinch of sugar
- Oil (for frying)
Preparation
Roughly chop the onion, garlic, carrot, and mushrooms and fry them in a little oil for 5-8 minutes.
Stir in the tomato paste and flour.
Deglaze the pot with red wine.
Add water, soy sauce, mustard, bay leaves, thyme, salt, pepper, and a pinch of sugar.
Let the mixture simmer for 10-15 minutes.
Strain the sauce through a sieve.
Heat the sauce again to thicken it a bit more.
Notes
This recipe makes 4-5 servings and takes about 20 minutes to prepare.
