Vegan Breakfast Granola Cups

Ingredients

Granola cups

  • 1 1/2 cups (170 g) granola
  • 1/2 cup (70 g) sunflower seeds, chopped
  • 2 tbsp (40 g) agave syrup (or maple syrup)
  • 2 heaped tbsp (50 g) sunflower seed butter
  • Pinch of salt

Filling

  • 1/4 cup (60 g) sunflower seed butter (melted)

Topping

  • 1/2 cup (90 g) dairy-free chocolate chips (or dark chocolate, chopped)

Preparation

  1. Mix the granola cups ingredients together in a bowl to form a sticky mixture

  2. Press the mixture firmly into muffin cups or silicone molds to shape them

  3. Bake in a preheated oven at 180°C for 10-15 minutes or until golden and set

  4. Allow the cups to cool completely

  5. Melt the sunflower seed butter for the filling and spoon it into the cooled granola cups

  6. Melt the dairy-free chocolate chips and drizzle or spread over the filled cups for the topping

  7. Refrigerate until the chocolate sets, then serve
