Zucchini and Quinoa Lasagna
Ingredients
- 1 (24oz) jar tomato basil sauce
- 2/3 cup dry quinoa (or 2 cups cooked quinoa)
- 4 cups baby spinach
- 3 medium zucchinis
- 1.5 cups ricotta cheese
- 1/3 cup grated parmesan cheese (we’ll grate together)
- 1 large egg
- 1 cup shredded mozzarella cheese (i’m using pre-shredded)
- 1 cup shredded mozzarella cheese (I’m using pre-shredded)
