Tropical Blue Chia Parfait
Ingredients
Nice cream
- 1 frozen banana
- 1 cup frozen pineapple
- 1/2 cup frozen mango
- (optional) dash of coconut milk
- 1/4 tsp @wearesuperu blue spirulina
Chia pudding
- 1.5 tbsp chia seeds
- 1/4 cup plant based mylk
- 1 to 2 tsp maple syrup
- dash of @wearesuperu blue spirulina
Preparation
Blend the nice cream ingredients until thick and smooth like ice cream in a high speed blender, then put in a bowl and set in the freezer.
For the blue vanilla chia pudding, whisk or mix together the ingredients in a small cup and set aside for about 10 minutes or until well thickened.
To assemble the parfait, pour or scoop the chia pudding into the bottom of a jar or cup, add the nice cream from the freezer on top, and optionally top with grain free hemp coconola for a tropical twist. It’s ready to eat!
