Tropical Blue Chia Parfait

Ingredients

Nice cream

  • 1 frozen banana
  • 1 cup frozen pineapple
  • 1/2 cup frozen mango
  • (optional) dash of coconut milk
  • 1/4 tsp @wearesuperu blue spirulina

Chia pudding

  • 1.5 tbsp chia seeds
  • 1/4 cup plant based mylk
  • 1 to 2 tsp maple syrup
  • dash of @wearesuperu blue spirulina

Preparation

  1. Blend the nice cream ingredients until thick and smooth like ice cream in a high speed blender, then put in a bowl and set in the freezer.

  2. For the blue vanilla chia pudding, whisk or mix together the ingredients in a small cup and set aside for about 10 minutes or until well thickened.

  3. To assemble the parfait, pour or scoop the chia pudding into the bottom of a jar or cup, add the nice cream from the freezer on top, and optionally top with grain free hemp coconola for a tropical twist. It’s ready to eat!
