Apple Cider Muffins with Warm Spices

Ingredients

  • 2 apples, peeled and shredded
  • 1/2 cup water
  • 2 tbsp apple cider vinegar
  • 1 cup flour
  • 1/2 cup sugar of choice
  • 1 tsp baking powder
  • A pinch of salt
  • 1 tsp cinnamon
  • 1/2 tsp cardamom
  • 1/2 tsp nutmeg
  • 2 flax eggs (2 tbsp ground flax seed mixed with 4 tbsp water, let sit for 5 mins)
  • 1/4 cup melted coconut oil
  • 1 tsp vanilla extract
  • 1/3 cup non-dairy milk

Preparation

  1. Prepare flax eggs by mixing 2 tbsp ground flax seed with 4 tbsp water and letting sit for 5 minutes

  2. Preheat oven to 350 degrees F

  3. Heat water and apple cider vinegar in a medium sized sauce pan over medium-high heat.

  4. Add shredded apples and let simmer until apples become soft (approx. 5 mins).

  5. Let apples cool slightly.

  6. Mix together all dry ingredients in a large bowl.

  7. Add all remaining ingredients to the bowl including the cooked apple.

  8. Stir until everything comes together and scoop into a greased muffin tin.

  9. Bake in a preheated oven at 350 degrees F for 20-22 mins.
