Apple Cider Muffins with Warm Spices
Ingredients
- 2 apples, peeled and shredded
- 1/2 cup water
- 2 tbsp apple cider vinegar
- 1 cup flour
- 1/2 cup sugar of choice
- 1 tsp baking powder
- A pinch of salt
- 1 tsp cinnamon
- 1/2 tsp cardamom
- 1/2 tsp nutmeg
- 2 flax eggs (2 tbsp ground flax seed mixed with 4 tbsp water, let sit for 5 mins)
- 1/4 cup melted coconut oil
- 1 tsp vanilla extract
- 1/3 cup non-dairy milk
Preparation
Prepare flax eggs by mixing 2 tbsp ground flax seed with 4 tbsp water and letting sit for 5 minutes
Preheat oven to 350 degrees F
Heat water and apple cider vinegar in a medium sized sauce pan over medium-high heat.
Add shredded apples and let simmer until apples become soft (approx. 5 mins).
Let apples cool slightly.
Mix together all dry ingredients in a large bowl.
Add all remaining ingredients to the bowl including the cooked apple.
Stir until everything comes together and scoop into a greased muffin tin.
Bake in a preheated oven at 350 degrees F for 20-22 mins.
