Fluffy Vegan Buttermilk Pancakes with Chocolate Ganache
Ingredients
- 3/4 cup almond milk
- 1/2 tsp apple cider vinegar
- 1/4 cup soy yogurt
- 1 tsp vanilla
- 1 tbs maple syrup
- 1 cup self-raising flour
- 1/2 tsp baking powder
Preparation
Mix together 3/4 cup almond milk with 1/2 tsp apple cider vinegar and let curdle for 5 minutes.
Whisk together with 1/4 cup soy yogurt, 1 tsp vanilla and 1 tbs maple syrup.
Mix in 1 cup self-raising flour and 1/2 tsp baking powder until just combined, lumps are good.
Cook on a greased pan over medium low heat, flipping when bubbles form or edges turn opaque and set.
