Fluffy Vegan Buttermilk Pancakes with Chocolate Ganache

Ingredients

  • 3/4 cup almond milk
  • 1/2 tsp apple cider vinegar
  • 1/4 cup soy yogurt
  • 1 tsp vanilla
  • 1 tbs maple syrup
  • 1 cup self-raising flour
  • 1/2 tsp baking powder

Preparation

  1. Mix together 3/4 cup almond milk with 1/2 tsp apple cider vinegar and let curdle for 5 minutes.

  2. Whisk together with 1/4 cup soy yogurt, 1 tsp vanilla and 1 tbs maple syrup.

  3. Mix in 1 cup self-raising flour and 1/2 tsp baking powder until just combined, lumps are good.

  4. Cook on a greased pan over medium low heat, flipping when bubbles form or edges turn opaque and set.
