Healthier Gluten-Free S’mores Cookies

Ingredients

  • 1 egg
  • 1/2 cup coconut sugar
  • 1 cup cashew butter
  • 2 tablespoons vanilla collagen
  • 1 teaspoon baking powder
  • 1/2 cup chocolate chips
  • 1/4 cup marshmallows

Preparation

  1. Preheat oven to 350°F.

  2. In a bowl, whisk 1 egg.

  3. Add 1/2 cup coconut sugar to the bowl.

  4. Add 1 cup cashew butter to the bowl.

  5. Add 2 tablespoons vanilla collagen to the bowl.

  6. Add 1 teaspoon baking powder to the bowl.

  7. Mix all ingredients together well.

  8. Add 1/2 cup chocolate chips and 1/4 cup marshmallows.

  9. Fold them in with a spatula.

  10. Line a pan with parchment paper.

  11. Form the mixture into 9-10 cookies and place them on the pan.

  12. Bake for 10 minutes.

  13. Let the cookies sit for 5-7 minutes to finish cooking.
