Healthier Gluten-Free S’mores Cookies
Ingredients
- 1 egg
- 1/2 cup coconut sugar
- 1 cup cashew butter
- 2 tablespoons vanilla collagen
- 1 teaspoon baking powder
- 1/2 cup chocolate chips
- 1/4 cup marshmallows
Preparation
Preheat oven to 350°F.
In a bowl, whisk 1 egg.
Add 1/2 cup coconut sugar to the bowl.
Add 1 cup cashew butter to the bowl.
Add 2 tablespoons vanilla collagen to the bowl.
Add 1 teaspoon baking powder to the bowl.
Mix all ingredients together well.
Add 1/2 cup chocolate chips and 1/4 cup marshmallows.
Fold them in with a spatula.
Line a pan with parchment paper.
Form the mixture into 9-10 cookies and place them on the pan.
Bake for 10 minutes.
Let the cookies sit for 5-7 minutes to finish cooking.
