Chickpea Cookie Dough Bars

Ingredients

  • 15.5 oz can chickpeas, rinsed and drained
  • 3/4 cup walnut flour or almond flour
  • 1/4 cup nut or seed butter
  • 1/4 cup honey or pure maple syrup
  • 1 egg
  • 1/2 tsp baking powder
  • Chocolate chips

Preparation

  1. Preheat oven to 350F and spray or line an 8x8 baking dish.

  2. Put all ingredients except chocolate chips into a food processor and blend until well combined.

  3. Pour the batter into a bowl and stir in the chocolate chips.

  4. Smooth out the batter in the baking dish and bake for 25 minutes.
