Healthy Protein Pancakes Made from Whole Foods

Ingredients

  • 100g/ 1 1/4 cup fine oats
  • 120g (1 medium) ripe banana
  • 180ml (3/4 cup) soy milk (or any plant milk)
  • 1 tbsp baking powder
  • 1 tsp cinnamon
  • 1 scoop protein powder

Preparation

  1. Mash the banana with a fork in a large bowl

  2. Blend the oats to form oat flour

  3. Mix the flour, milk, baking powder, cinnamon and protein powder in the bowl with the mashed banana, whisk to combine

  4. Heat up a large non-stick pan over medium to low heat

  5. Pour one or two pancakes at a time, let cook for 1-2 minutes until bubbles appear, then flip over and cook for an additional 30 seconds

  6. Stack on a plate and enjoy with some nut butter and fresh berries
