Hearty Savoury Oat Loaf with Mixed Seeds
Ingredients
- 3 cups whole rolled oats
- 1 teaspoon bicarbonate of soda
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1/2 heaped cup mixed seeds (e.g., flax, pumpkin, chia, hemp)
- 1 teaspoon finely chopped thyme
- 1 teaspoon finely chopped rosemary
- 2 cups Greek yoghurt (or dairy-free alternative)
- 1 large egg
Preparation
Preheat oven to 180C and line a loaf tin
Mix all the dry ingredients in a large bowl
In a smaller bowl, whisk together the wet ingredients
Pour the wet ingredients into the dry and fold together until well combined. The mixture will be very thick.
Bake for 50-60 minutes until an inserted knife comes out clean
Let it cool completely before slicing.
Enjoy with toppings of your choice, such as butter or hummus.
