Hearty Savoury Oat Loaf with Mixed Seeds

Ingredients

  • 3 cups whole rolled oats
  • 1 teaspoon bicarbonate of soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1/2 heaped cup mixed seeds (e.g., flax, pumpkin, chia, hemp)
  • 1 teaspoon finely chopped thyme
  • 1 teaspoon finely chopped rosemary
  • 2 cups Greek yoghurt (or dairy-free alternative)
  • 1 large egg

Preparation

  1. Preheat oven to 180C and line a loaf tin

  2. Mix all the dry ingredients in a large bowl

  3. In a smaller bowl, whisk together the wet ingredients

  4. Pour the wet ingredients into the dry and fold together until well combined. The mixture will be very thick.

  5. Bake for 50-60 minutes until an inserted knife comes out clean

  6. Let it cool completely before slicing.

  7. Enjoy with toppings of your choice, such as butter or hummus.
