Mixed Berry Coconut Chia Pudding

Ingredients

  • 1 can of coconut milk
  • 1 cup of frozen or fresh berries
  • 1 banana
  • 1/2 cup of chia seeds

Preparation

  1. Add the coconut milk, berries and banana into a blender and blitz until smooth.

  2. Pour the mixture into a bowl and add the chia seeds. Stir until they are fully combined.

  3. Cover and put in the fridge overnight.

  4. Serve with some fresh berries of your choice or granola on top.
