No Bake Cookie Caramel Cake
Ingredients
- Cookie dough base: : 240g cooked
- 30g nut butter
- 50g dates
- ~80g protein powder
- cookie dough flave drops (optional)
- 30g dark chocolate
- 30g cacao nibs
- Cashew frosting: •100 ml coconut milk
- 50 g cashews (soaked in cold water for 12 hours, or 1-2 hours in hot water)
- 1 tbsp marple syrup
- 1 tsp vanilla extract
- 25 ml almond milk
- 1tbsp coconut oil
- Date caramel: ~ 50g dates
- a splash of water
- 1 tsp peanut butter
- 1 pinch of salt
Preparation
Cookie dough base
Puree the beans with nut butter and dates
If needed add a splash of water
Add the rest of the ingredients
Press in a small, round form
Cashew frosting
Mix all ingredients in a mixer or food processor until it's smooth
Spread on the cake base and put it in the freezer
Date caramel
Mix everything in a mixer or food processor until it's smooth
Spread it on the cashew frosting, top with cookies and enjoy
