No Bake Cookie Caramel Cake

Ingredients

  • Cookie dough base: : 240g cooked
  • 30g nut butter
  • 50g dates
  • ~80g protein powder
  • cookie dough flave drops (optional)
  • 30g dark chocolate
  • 30g cacao nibs
  • Cashew frosting: •100 ml coconut milk
  • 50 g cashews (soaked in cold water for 12 hours, or 1-2 hours in hot water)
  • 1 tbsp marple syrup
  • 1 tsp vanilla extract
  • 25 ml almond milk
  • 1tbsp coconut oil
  • Date caramel: ~ 50g dates
  • a splash of water
  • 1 tsp peanut butter
  • 1 pinch of salt

Preparation

  1. Cookie dough base

  2. Puree the beans with nut butter and dates

  3. If needed add a splash of water

  4. Add the rest of the ingredients

  5. Press in a small, round form

  6. Cashew frosting

  7. Mix all ingredients in a mixer or food processor until it's smooth

  8. Spread on the cake base and put it in the freezer

  9. Date caramel

  10. Mix everything in a mixer or food processor until it's smooth

  11. Spread it on the cashew frosting, top with cookies and enjoy
