Puffy Glazed Lemon Cookies

Ingredients

  • 1/2 tsp baking soda
  • 1 tsp baking powder
  • 1 tbsp lemon zest
  • 1/8 tsp salt
  • glaze
  • 1-2 tbsp lemon juice

Preparation

  1. Preheat the oven to 350ºF

  2. Melt the coconut butter and agave

  3. Whisk in the lemon juice

  4. Add the cassava flour, baking soda, baking powder, lemon zest, and salt

  5. Stir to combine

  6. Scoop about 2 tbsp of dough and roll into a ball

  7. Arrange on a baking sheet, and press to just slightly flatten

  8. Bake for 8-10 minutes at 350ºF until golden brown

  9. Enjoy warm, or cool before glazing

  10. Whisk together the powdered sugar and lemon juice to make a thick but drizzle-able glaze

  11. Glaze cooled cookies, refrigerate until set
