Vegan Gluten-Free Chickpea Cookie Dough
Ingredients
- 1 can of chickpeas, drained and rinsed (340g)
- 125 g peanut butter
- 60 ml maple syrup
- 10 ml vanilla extract
- 30 ml pea protein
- 15 ml ground chia seeds
- 60 g semi-sweet chocolate chips
Preparation
In a food processor, add chickpeas, peanut butter, vanilla extract, maple syrup. Blend until smooth and creamy.
Add the ground chia seeds and pea protein to the food processor and blend until everything is combined.
Add the chickpea cookie dough mixture to a small bowl. Fold in the chocolate chips.
Serve immediately. Enjoy!
