Asian Style Eggplant Bowl

Ingredients

  • 1 Tablespoon sesame oil
  • 1 Tablespoon red miso paste, or tamari
  • 1 teaspoon maple syrup
  • 2-3 cloves garlic, minced
  • 1 Tablespoon water
  • 1 medium eggplant

Preparation

  1. Whisk sesame oil, miso paste, maple syrup, garlic and water in a small bowl

  2. Wash eggplant and slice into 1/2” thick rounds

  3. Heat a large nonstick pan and add eggplant, brushing each side lightly with sauce

  4. Cover and cook a few minutes until the eggplant begins to soften and flip over, brush with more sauce and repeat until eggplant is done! We enjoyed the eggplant with short grain brown rice + edamame + leftover kale
