Asian Style Eggplant Bowl
Ingredients
- 1 Tablespoon sesame oil
- 1 Tablespoon red miso paste, or tamari
- 1 teaspoon maple syrup
- 2-3 cloves garlic, minced
- 1 Tablespoon water
- 1 medium eggplant
Preparation
Whisk sesame oil, miso paste, maple syrup, garlic and water in a small bowl
Wash eggplant and slice into 1/2” thick rounds
Heat a large nonstick pan and add eggplant, brushing each side lightly with sauce
Cover and cook a few minutes until the eggplant begins to soften and flip over, brush with more sauce and repeat until eggplant is done! We enjoyed the eggplant with short grain brown rice + edamame + leftover kale
