Beetroot Hummus for Pre-Dinner Crudités and Toast

Ingredients

  • 380g carton of organic chickpeas @mr_organic
  • 1 vacuum pack of organic cooked beetroot 250g @waitroseandpartners
  • 2 heaved tbsp of @meridianfoods TAHINI
  • 1tspn Himalayan salt
  • 2tspn coriander & cumin powder
  • 1tspn chopped garlic
  • 1 lemon juiced
  • 100ml extra virgin olive oil
  • green chillies and coriander (cilantro) if you like

Preparation

  1. Blitz all the above in a food processor or nutribullet.

  2. Add chopped chillies and chopped coriander over the top then mix.
