Courgette and Sweetcorn Fritters

Ingredients

  • 200g plain flour
  • 1 tsp baking powder
  • 2 eggs
  • 250ml milk
  • 2 courgettes, grated and squeezed gently with kitchen roll
  • 200g tinned sweetcorn, drained
  • 80g grated cheddar
  • 1 tbsp fennel seeds, ground in a pestle & mortar

Preparation

  1. Mix flour and baking powder in a large bowl. Make a well in the middle and add the eggs and milk. Whisk well until completely smooth, then add the courgette, sweetcorn, cheese and fennel. Season with black pepper and a little salt, if using.

  2. Heat a splash of oil in a non-stick frying pan over a medium heat. Add a serving spoon amount of mixture to the pan and cook for 2 mins on either side or until golden brown and cooked through.

  3. Serve with a tomato guacamole, salad or side of your choice. Or simply nibble as a snack throughout the day.
