Healthy Veggie Muffins for Kids Snacks

Ingredients

  • 1 medium carrot
  • 1/2 cup frozen peas
  • 1/2 cup sweetcorn
  • 1 red pepper
  • 3 spring onions
  • 1 1/4 cup cheddar cheese
  • 1/2 cup milk
  • 1/2 cup Greek yoghurt
  • 1/4 cup olive oil
  • 2 eggs
  • 2 cups plain or whole wheat flour
  • 2 tsp baking powder
  • 1/2 tsp salt

Preparation

  1. You can use whatever vegetables you have; for example, if sweetcorn is unavailable, increase the amount of other vegetables.

  2. Preheat oven to 180C and line or grease a muffin tin.

  3. Put the carrot into a clean towel and squeeze out all the water. Put it into a large bowl.

  4. Add the rest of the vegetables and cheese.

  5. In a smaller bowl, whisk together the milk, yogurt, olive oil, salt, and egg, and whisk well.

  6. Pour the wet mix into the vegetables and mix well.

  7. Put a sieve over the bowl and sieve in the flour and baking powder.

  8. Using a spatula, gently combine the mix, taking care not to overmix.

  9. Spoon into the tin and bake for about 25 minutes.
