Healthy Veggie Muffins for Kids Snacks
Ingredients
- 1 medium carrot
- 1/2 cup frozen peas
- 1/2 cup sweetcorn
- 1 red pepper
- 3 spring onions
- 1 1/4 cup cheddar cheese
- 1/2 cup milk
- 1/2 cup Greek yoghurt
- 1/4 cup olive oil
- 2 eggs
- 2 cups plain or whole wheat flour
- 2 tsp baking powder
- 1/2 tsp salt
Preparation
You can use whatever vegetables you have; for example, if sweetcorn is unavailable, increase the amount of other vegetables.
Preheat oven to 180C and line or grease a muffin tin.
Put the carrot into a clean towel and squeeze out all the water. Put it into a large bowl.
Add the rest of the vegetables and cheese.
In a smaller bowl, whisk together the milk, yogurt, olive oil, salt, and egg, and whisk well.
Pour the wet mix into the vegetables and mix well.
Put a sieve over the bowl and sieve in the flour and baking powder.
Using a spatula, gently combine the mix, taking care not to overmix.
Spoon into the tin and bake for about 25 minutes.
