Cypriot Olive and Herb Pie

Ingredients

  • 3 eggs
  • 1/2 cup olive oil
  • 2 cups milk
  • 3 1/2 cups flour
  • 3 tsp baking powder
  • 1 tbsp dry mint
  • 1 cup spring onions, finely chopped
  • 1 cup fresh coriander, finely chopped
  • 3 cups pitted olives, cut in half or large chunks
  • sesame seeds to top before baking

Preparation

  1. Preheat the oven to 180C

  2. In a large bowl, beat together the eggs, oil and milk

  3. Put a fine sieve over the bowl and sieve in the flour and baking powder and mix till just combined

  4. Fold in the remaining ingredients till evenly distributed

  5. Pour into a greased bund tin and sprinkle the sesame seeds on top

  6. Bake for around 50 minutes. It’s done when a knife comes out clean

  7. Allow it to cool a little and turn out of the tin

  8. Let it cool completely before slicing
