Cypriot Olive and Herb Pie
Ingredients
- 3 eggs
- 1/2 cup olive oil
- 2 cups milk
- 3 1/2 cups flour
- 3 tsp baking powder
- 1 tbsp dry mint
- 1 cup spring onions, finely chopped
- 1 cup fresh coriander, finely chopped
- 3 cups pitted olives, cut in half or large chunks
- sesame seeds to top before baking
Preparation
Preheat the oven to 180C
In a large bowl, beat together the eggs, oil and milk
Put a fine sieve over the bowl and sieve in the flour and baking powder and mix till just combined
Fold in the remaining ingredients till evenly distributed
Pour into a greased bund tin and sprinkle the sesame seeds on top
Bake for around 50 minutes. It’s done when a knife comes out clean
Allow it to cool a little and turn out of the tin
Let it cool completely before slicing
