Easy Loaded Chicken Salad

Ingredients

  • 2 chicken breasts
  • 1 egg
  • 1/2 cup almond flour
  • 1 tsp chili powder
  • Sprinkle of salt
  • 1/4 tsp pepper
  • Green beans
  • Trader Joe's green goodness dressing

Preparation

  1. Prepare two shallow bowls: whisk the egg in one and mix the almond flour, chili powder, salt, and pepper in the other.

  2. Dip each chicken breast first in the egg, then in the flour mixture, pressing to adhere.

  3. Preheat the air fryer to 390°F.

  4. Spray the air fryer basket with cooking spray if necessary.

  5. Cook the chicken breasts for 8-9 minutes, flip them, and cook for another 8 minutes. Check internal temperature to ensure it's done.

  6. Sauté the green beans until slightly softened.

  7. Assemble the salad by combining the cooked chicken, sautéed green beans, and Trader Joe's green goodness dressing.
