Gluten-Free Coconut Chicken Bites with Roasted Peppers
Ingredients
Coconut chicken bites
- 2 chicken breasts, cubed
- 1 egg
- 1 tbsp coconut aminos
- 1/2 cup fine almond flour
- 1/3 cup coconut shreds
Roasted peppers
- mini peppers, halved
- coconut aminos
Preparation
Beat the egg and coconut aminos in a bowl and set aside.
Mix together the almond flour and coconut shreds and set aside.
Dip the cubed chicken in the egg mixture, roll in the flour mixture and place in the air fryer.
Toss the halved mini peppers in coconut aminos and transfer to the other side of the air fryer.
Set the air fryer to 390°F and cook for 17-20 minutes while flipping halfway through.
