Vegan Buckwheat Pancakes with Coconut and Linseeds
Ingredients
- 2 tbsp flour
- 2 tbsp coconut flakes
- 1 tbsp crushed linseeds/chia
- 1/4 cup veggie milk
- 1 tsp baking powder
- Vanilla extract
Preparation
Mix all ingredients until the batter is runny.
Pour the mixture into a slightly greased pan.
Cook to make 3 medium pancakes.
Top with Greek yogurt and peanut butter if desired.
