Vegan Buckwheat Pancakes with Coconut and Linseeds

Ingredients

  • 2 tbsp flour
  • 2 tbsp coconut flakes
  • 1 tbsp crushed linseeds/chia
  • 1/4 cup veggie milk
  • 1 tsp baking powder
  • Vanilla extract

Preparation

  1. Mix all ingredients until the batter is runny.

  2. Pour the mixture into a slightly greased pan.

  3. Cook to make 3 medium pancakes.

  4. Top with Greek yogurt and peanut butter if desired.
