Toasted Oats and Nut Energy Balls
Ingredients
- 2 cups oats
- a few hazelnuts
- 1 tablespoon pumpkin seeds
- 2 tablespoons maple syrup
- 5-6 dried apricots
- 3 tablespoons peanut butter
Preparation
Toast the oats, hazelnuts, pumpkin seeds, and maple syrup for 30 minutes at 200°C or Gas mark 6.
Dice a handful of dried apricots and add them to the toasted mixture.
Add peanut butter, mix until combined, and roll into small bite-size balls.
Refrigerate overnight.
