Toasted Oats and Nut Energy Balls

Ingredients

  • 2 cups oats
  • a few hazelnuts
  • 1 tablespoon pumpkin seeds
  • 2 tablespoons maple syrup
  • 5-6 dried apricots
  • 3 tablespoons peanut butter

Preparation

  1. Toast the oats, hazelnuts, pumpkin seeds, and maple syrup for 30 minutes at 200°C or Gas mark 6.

  2. Dice a handful of dried apricots and add them to the toasted mixture.

  3. Add peanut butter, mix until combined, and roll into small bite-size balls.

  4. Refrigerate overnight.

  1. These energy balls are very addictive!
