Easy No-Bake Vegan Cookies

Ingredients

  • 70g oats
  • 1 tbsp dried cranberries or raisins
  • 20g bran flakes or rice crispies
  • 1 tsp pumpkin seeds
  • 2 tsp maple syrup
  • 45g dark chocolate

Coating

  • 40g dark chocolate

Preparation

  1. Line a tray with baking parchment.

  2. Place the chocolate in a bowl and microwave for 20-30 seconds, then take the bowl out and give it a stir. Place the bowl back in the microwave and repeat the process until the chocolate has melted.

  3. Once melted, add the remaining ingredients and stir until combined.

  4. With your hands, form six balls out of the mixture, press into a cookie and place onto the lined tray.

  5. Place in the fridge for around 20 minutes or in the freezer for 5-10 minutes to set.

Optional coating

  1. Once the cookies are chilled and set, melt 40g of dark chocolate.

  2. Using a fork, dip each cookie into the chocolate to cover evenly.

  3. Return onto the tray and refrigerate until set.
