Easy No-Bake Gluten-Free Millionaire Shortbread

Ingredients

  • 100g oats, milled
  • 25g coconut sugar
  • 30g sunflower spread
  • 200g dates, soaked in water
  • 50g dark chocolate
  • Sprinkle of pink rock salt

Preparation

  1. Soak dates in water then blend to a thick paste

  2. Throw oats in a blender for a milled consistency then use your fingertips to mix in the butter and sugar to form a dough

  3. Flatten dough out into a rectangular shape

  4. Spread gooey date caramel on top

  5. Melt chocolate and then spread a layer on top with a sprinkling of salt

  6. Leave to chill and enjoy
