Vegan Gluten-Free Unicorn Popsicles with Superfoods
Ingredients
- 1 cup cashews, soaked in hot water for 5 minutes then drained
- 1 cup canned coconut cream
- 2 tsp vanilla essence
- 1/8 cup maple syrup
- 1 ripe or overripe medium banana
- 3 tsp @unicornsuperfoods açai berry powder
- 3 tsp @unicornsuperfoods antioxidant blend powder
- 3 tsp @unicornsuperfoods ocean blend powder
Preparation
Prepare your icy pole moulds and set aside along with three small bowls and some toothpicks or a fork.
In a blender or food processor add all ingredients except for the powders and blend on a high speed for around 1-2 minutes until smooth and completely lump free.
Pour the mixture into each of the three bowls, ensuring an even amount in each bowl.
Add each superfood powder to a bowl, to create a pink, purple and blue mixture.
Working quickly, add spoonfuls of the mixture to each icy pole mould to create a layered effect.
Once you have repeated this for all pops, use the fork or toothpick and swirl the mixture around, creating the swirl pattern.
Place the finished pops in the freezer for 6-8 hours or overnight.
Remove them from their moulds and serve when you like. Enjoy!
