Blueberry Paleo Collagen Pancakes

Ingredients

  • 1 cup almond flour
  • 2 tbsp coconut flour
  • 3 eggs
  • 2 tbsp unsweetened almond milk
  • 1 mashed banana
  • 1 tsp cinnamon
  • 1 scoop furtherfood collagen
  • 1/4 tsp baking soda
  • blueberries

Preparation

  1. Blend or mix all ingredients together until well combined.

  2. Heat a non-stick skillet over medium heat

  3. Pour batter onto the skillet to form 10-12 mini pancakes

  4. Add blueberries to the pancakes before flipping them

  5. Cook until bubbles form on the surface, then flip and cook the other side until done

  6. Remove pancakes from heat and top with warmed blueberries

  7. To warm blueberries, heat them in a small pan or microwave until warm
