Baked Coffee Cream Dessert
Ingredients
Cookie layer
- 2 cups ground biscuits
- 1 1/3 cups melted butter
- 1/4 teaspoon cardamom
Coffee layer
- 1 cup clotted cream
- 1 cup sweetened condensed milk
- 1 cup pitted dates
- 1 tablespoon instant coffee
- 2 tablespoons unsweetened cocoa powder
Preparation
Prepare a 9-inch pan and line it with aluminum foil, leaving some overhang for easy removal.
For the cookie layer, in a deep bowl, mix the ground biscuits and melted butter with your fingertips until combined.
Press the mixture firmly into the pan to form a compact base and refrigerate for about an hour.
Position the oven rack in the middle and preheat the oven to 180°C.
For the coffee layer, in a blender, combine the clotted cream, sweetened condensed milk, pitted dates, instant coffee, and cocoa powder, and blend until smooth.
Pour the coffee mixture over the biscuit base in the pan.
Bake the dessert for 20 minutes or until set.
Remove from the oven, place on a wire rack, and allow to cool completely before refrigerating for at least an hour or overnight.
Remove the dessert from the pan using the foil overhang, cut into small squares with a sharp knife, and serve.
