Blueberry Cheesecake
Ingredients
Base
- 110 grams butter
- 200 grams Oreo biscuits or Marie biscuits
Filling
- 500 grams cream cheese
- 30 grams butter
- 120 grams castor sugar
- 30 grams corn flour
- 200 milliliters whipping cream
- 4 eggs
Preparation
Mix the crushed biscuits with the melted butter and press the mixture firmly into the pan.
Mix all the filling ingredients until smooth and pour over the biscuit base in the pan.
Prepare a water bath by placing the pan in a larger tray filled with hot water and bake in a preheated oven at 160°C for 1 hour, adjusting for your oven if necessary.
After baking, leave the cheesecake in the oven with the door slightly open for 15 minutes.
Remove from the oven and cool in the freezer.
Notes
The topping is optional and can be made with strawberries, chocolate, or blueberries as preferred.
Sugar amount can be adjusted; 100 grams was used in the example instead of 120 grams.
