Pork Confit with Spiced Marinade

Ingredients

  • 1 pork belly
  • 1 tbsp honey
  • 1 tbsp soy sauce
  • Olive oil
  • Salt and Pepper
  • 1 tbsp paprika
  • 1 tbsp ginger
  • 1 tbsp 5 berry mixture
  • 1 tbsp fennel seed
  • 4 leeks
  • 250ml broth
  • 1 glass white wine

Preparation

  1. Combine the honey, soy sauce, paprika, ginger, 5 berry mixture, fennel seed, salt, and pepper to make a marinade.

  2. Rub the marinade over the pork belly and refrigerate for at least 1 hour.

  3. Place the pork belly in a baking dish with olive oil, broth, white wine, and leeks.

  4. Cook in the oven at 320°F for 3 hours.
