Simple Baked Chocolate Cheesecake

Ingredients

Crust

  • 1/2 cup ground plain biscuits
  • 1/2 cup melted butter
  • 1/2 teaspoon cinnamon

Cheese mixture

  • 2 cups soft cream cheese
  • 1/2 cup fine-grained sugar
  • 2 teaspoons starch
  • 1 cup sour cream
  • 2 large eggs
  • 2 tablespoons lemon juice
  • 1 tablespoon lemon zest
  • 1 cup plain chocolate chips

Preparation

  1. Get a 9-inch springform pan.

  2. In a deep bowl, combine the ground biscuits, melted butter, and cinnamon using your fingertips until well mixed. Press the mixture into the pan to form a compact base and chill in the refrigerator for 30 minutes.

  3. Position the oven rack in the middle and preheat the oven to 180°C. Prepare a 15-inch high-sided round tray.

  4. For the cheese mixture, in a mixer bowl, add the cream cheese, sugar, and starch. Using the whisk attachment, mix on medium speed for 2-3 minutes until light and creamy. Add the sour cream, eggs, lemon juice, and lemon zest, then mix on medium speed for 1-2 minutes.

  5. Pour the cheese mixture into the pan over the biscuit base. Scatter the chocolate chips over the cheese mixture without stirring.

  6. Place the pan in the tray and pour water into the tray up to half the height of the pan.

  7. Bake in the preheated oven for 45 minutes until the cheese mixture is set and golden. Turn off the oven and leave the cheesecake inside for 1 hour to cool completely.

  8. Remove the cheesecake from the oven and chill in the refrigerator for several hours or overnight until fully cooled and flavors develop.
