Arabic Spiced Meat Flatbread
Ingredients
Dough
- 1.5 cups warm water
- 1.5 teaspoons instant yeast
- 2 tablespoons sugar
- 3.5 cups flour
- 1 teaspoon salt
- 1 tablespoon olive oil
Filling
- 500g ground meat
- 1 medium onion
- 2 bell peppers
- 3 cloves garlic
- 1 tomato
- 1 teaspoon crushed chili
- 1 teaspoon paprika
- 1 teaspoon coriander
- 1 teaspoon mixed spices
- 1 teaspoon salt
- 0.5 teaspoon black pepper
- 2 tablespoons olive oil
- 2 tablespoons pomegranate molasses

Preparation
Sift the flour and salt.
In a mixer bowl, put water, yeast, and sugar and leave for a few minutes.
Add flour and oil, knead for a few minutes to get smooth dough.
Place dough in an oiled bowl, cover, and leave for an hour to double in size.
Prepare large oven trays and oil them.
Divide dough into approximately 3-inch balls, place on tray spaced apart, and oil them.
Cover the dough and leave for a few minutes.
For the filling, in a food processor, put onion, garlic, and bell peppers and blend until smooth. Add tomato, crushed chili, paprika, coriander, mixed spices, salt, and black pepper and blend until smooth. Add ground meat, olive oil, and pomegranate molasses and blend until mixed into a smooth paste.
Shape the filling into 3-inch balls. Place a meat ball on a dough disc and press with fingers to spread the meat over the dough to the desired thinness.
Preheat oven to 250°C. Put the tray in the oven for a few minutes until the bottom browns, then broil the top until browned as desired.
